For example, a ball that suddenly appears from the side of the road is oftentimes being run after by a child so you should immediately slow down and be prepared to make a sudden stop.

===Cleaning the pan===

Some brand new cast iron comes pre-seasoned. If you're buying new you may as well go for the pre-seasoned options (Lodge Logic is a popular brand). If you've purchased a used piece, have a hand-me-down from grandma or a new pan that isn't seasoned you'll need to give it a good coat of lard before you start using it.

The first step is the clean the pan with soap and warm water. Scrub out any rust spots if it's an old pan, otherwise just give it a quick scrub to remove the factory anti-rust coating. Don't worry too much if there's a black build up in some spots on your old pan, that isn't necessarily a bad thing, in fact, that's more or less what you're trying to create.

Once your pan is cleaned to your satisfaction, it's time to season it. Pre-heat the oven to 250°F (121°C).

Pick up a box of lard at your favorite supermarket (usually around $2) and a roll of heavy paper towels. Now comes the messy part. Take a dollop of lard (about a 1/4 cup for a 10 inch skillet, more or less depending on the size of your pan) and use a paper towel to smear it all over the inside of the pan and around the rim. Once you've got a good coat inside you can smear the outside edge.

It generally isn't necessary to do the bottom of the pan since any lard there will just be smoked off by flame, but if you've got rust spots or worn areas on the bottom a coat of lard can help protect them from further rust or damage.

Now set the pan in the oven and place a sheet tray under it to catch any drippings. Let the pan bake for about three hours. The low heat will slowly open the pores in the iron and allow the lard to penetrate.

AFter three hours pull the pan out of the oven and set it on the stovetop. Once it's cool enough to touch, take the paper towels and gently wipe up the excess liquified lard. Allow the pan to cool for another hour and repeat the wiping process.

Once the pan is completely cooled you can put it away until it's ready to use. For best results cook something greasy the first time you use pan -- bacon works well.

===Caring for your seasoned pan===

Never, never put your cast iron in the dishwasher. In fact, the best way to clean the pan is simply rinsing it under warm water. If there's something sticky that won't come off, use a bit of mild dish soap.

Another trick is rinse the pan with warm water and then return it to the burner. Heat it up a bit and, if your pan is properly seasoned, any sticky items should harden, turn black and flake off.

Once you pan is clean, return it to the heat and wipe it down with a little vegetable oil. The best way to store cast iron is with a paper towel on it to absorb any moisture.

It's generally a good idea to periodically season your cast iron -- every couple of years will be sufficient for most people.
